Its name is inspired by "Moonshine," the illicit whiskey made during the Prohibition era of the 1930s. In a country where Scotch-style whiskey dominates, this rare bourbon-style whiskey was crafted through extensive trial and error in the selection of ingredients, fermentation, and distillation.

Yamaura Masatoshi

Board Director, Distillery Chief & Master Distiller (Whiskey & Shochu)

Graduated from the Graduate School of Science and Engineering at Kagoshima University with a Ph.D (Science), and is a J.S.A. Certified Sommelier.

He previously served as the Head of Research and Development for a shochu brewery at a major Japanese sake company and was the Head of Production at a single malt distillery. He later joined Whiskey&Co., Inc.

Under his expertise, our unaged whiskey spirit was awarded "Top of the Best" in the Japanese Spirits category in France in April 2025. Subsequently, in August 2025, our first-release barrel-aged whiskey secured the Master Medal—the highest accolade—at The World Whisky Masters in London.
